Una raccomandazione, non comprate mai cavolfiori che abbiano macchie scure, vol dire che non sono feschi.
Frittelle di cavolfiore
1 piccolo cavolfiore
3 cucchiai di farina
2 cucchiai di formaggio stagionato grattugiato
1 uovo
sale e pepe
Procedimento
Lessare il cavolfiore diviso in cimette in acqua leggermente salata per circa 15 minuti o fino a quando risulterà tenero. Scolare bene, lasciarlo intiepidire e schiacciarlo con una forchetta fino a ridurlo in una purea grossolana.
Aggiungere l’uovo, il formaggio e la farina a cucchiaiate - impossibile determinarne l’esatta quantità che dipenderà dalla grandezza e dall’umidità del cavolfiore - regolate di sale e pepe e lasciate riposare per circa venti minuti, dovrete ottenere un composto abbastanza spesso.
Al momento di friggere versate un sottile strato di olio in una padella antiaderente e mettete a scaldare. Versate il composto di cavolfiore a cucchiaiate ed appiattitelo col dorso del cucchiaio. Fate friggere fino a quando saranno uniformemente dorate, non troppo velocemente altrimenti l’interno rimarrà crudo, e girandole una sola volta.
Quindi tiratele su e adagiatele su un doppio foglio di carta assorbente.
Servire caldissime.
Parmesan Cauliflower Fritters
1 small head cauliflower
3 tablespoons flour
Salt & Pepper
2 tablespoons grated Parmesan cheese
1 egg
To prepare the cauliflower, trim off any leaves and use a small knife to divide the cauliflower into little florets. Add them to a large pan of boiling salted water and simmer for 15 minutes or until very soft. Drain into a colander. Let it cool slightly, then mash the heck out of it in a big bowl. Add beaten eggs, Parmesan, salt, and pepper, and stir to combine. Add flour by heaping tablespoons—the final amount you use will depend on how moist your cauliflower is. You want this to be quite thick, closer to the consistency of raw meatballs than pancake batter. Set aside for 10 minutes to let the flour absorb fully.
Cover your largest skillet with a thin layer of olive oil, and place over medium heat. When it’s shimmering hot, add large spoonfuls of the cauliflower mixture and flatten into a pancake. Don’t overcrowd the pan, or the oil temperature will lower too much and your results will be greasy. When browned on one side, after 5-7 minutes, flip and cook on the other side until it’s brown too, another 5-6 minutes. Remove from pan and drain on paper towels. Repeat with remaining cauliflower mixture until it’s all gone.
