Sorry.<BR/><BR/>Do use baking soda (bicarbonato di soda) in the water, it makes a difference. And malt makes a big difference in the dough. You can get that at stores specializing in beermaking. (Malt is used in most beers).<BR/><BR/>As far as a recipe, take Jeffrey Hamelman's <I>Bread</I> -- there's a decent one there. Or the Chow recipe. Subtract 50% of the flour and to that add all of the water and 25% of the yeast. Let this "sponge" sit for 2-3 hours, then add the malt, salt, rest of flour and yeast. Then follow those recipes.
