Maritozzi con la panna

Di tanto in tanto mi capita di provare una netta ed insopportabile nostalgia per Roma, che equivale alla nostalgia dell'odore di pizza e di supplì, dei bar che sono anche latterie e dei maritozzi con la panna, quei semplicissimi panini dolci, tagliati per lungo e riempiti di panna montata. Da buona emigrante, anche io mantengo saldi i legami con la madre patria attraverso il cibo e questa voglia irresistibile di maritozzo mi è costata oltre 12 ore di lievitazione ed un piccolo patrimonio speso in farine italiane - Caputo Rossa $4.50 al kg!

Maritozzi con la panna

La ricetta - sottratta al maestro Adriano - non è tanto complicata ma decisamente lunga. La lievitazione avviene in tempi successivi e, se optate per la maturazione in frigorifero, dura circa 12 ore - una notte intera. Ma è un procedimento per cui vale la pena pazientare perchè vi permetterà di ottenere dei panini profumatissimi, morbidi, ben alveolati - il tipico odore del lievito è praticamente inavvertibile - inoltre, conservano più a lungo la freschezza e la fragranza.

Ricetta e testo di Adriano 'Profumo di Lievito'

Ingredienti
Farina w 300*, 450gr
Farina di riso, 50gr
Acqua, 200gr
Zucchero, 90gr
Miele, 1 cucchiaio (possibilmente d’arancio)
Uovo intero, 1
Tuorlo d'uovo, 1
Lievito fresco, 8gr
Sale, 8gr
Malto (o miele), 1 cucchiaino malto
Burro, 60gr
Olio di mais (o arachide o riso), 40gr
Arancia, 1 (zeste grattugiate)
Albume e sciroppo di zucchero per pennellare

*in alternativa Manitoba per impiego non professionale, oppure Caputo Rossa 00.

Procedimento
Portiamo quasi a bollore l’acqua con metà delle zeste e riscaldiamo l’olio con l’altra metà.

Sciogliamo il lievito ed il malto nell’acqua intiepidita (che avremo riportato a 200g), uniamo 200g di farina e lasciamo gonfiare a temp. ambiente (ca 1 ora). Misceliamo il resto della farina (250g) con quella di riso.

Uniamo metà della farina e dello zucchero ed avviamo la macchina a vel. 1, all’assorbimento uniamo l’uovo con il resto dello zucchero e della farina, facciamo andare per qualche giro, poi inseriamo il tuorlo con il miele ed il sale, aumentiamo la vel. a 1,5 ed incordiamo.

Aggiungiamo il burro morbido in due volte e, quando avremo ottenuto una buona incordatura, uniamo l’olio a filo, fermandoci di tanto in tanto per evitare che l’impasto si smolli.

Copriamo e poniamo a 26° fino al raddoppio (ca. 2 ore)

Rovesciamo sulla spianatoia infarinata e diamo le pieghe del tipo 2, arrotondiamo e copriamo a campana.

A questo punto, volendo possiamo trasferire l’impasto in frigo a 4° fino al giorno successivo.

Dopo 30’ porzioniamo in pezzi da 80gr ed avvolgiamo a palla stretto.
Dopo 15’ capovolgiamo le sfere e riavvolgiamo a filoncino, stringendo bene.
Copriamo con pellicola e mettiamo a lievitare a 28° (ca 1 ora)

Pennelliamo con albume ed inforniamo a 180° per 12’ o fino a cottura.
Appena fuori dal forno lucidiamo con sciroppo di zucchero a 30° (135gr di zucchero portati a bollore con 100gr di acqua e raffreddati).



Roman maritozzi (oval-shaped sweet buns)

Ingredient: 450g Italian flour Caputo Rossa 00 (or strong flour) - 200g water - 50g rice flour - 60g butter - 90g Sugar - 1 whole egg and 1 egg yolk - 8 gr fresh yeast - 1 teaspoon of malt (of honey) - 8g salt - 40g corn oil - 1 tablespoon of honey - grated zest of one orange - white egg to brush - sugar syrup.

Method: bring to boil the water with half of orange zest and warm the oil with other half zest orange. Let cool.
Dissolve yeast and malt into the water whit orange zeste (at room temperature). Add 200g of flour and mix until thoroughly incorporated and smooth. Cover with plastic wrap and leave at room temperature for one hour. Mix the remaining flour (240g) with rice flour.
After 1 hour add half flour and sugar and mixing dough with a planetary mixer on low speed (1 ) for half minute. Add the egg and remaining flour and sugar while continuously beating at low speed. Add egg yolk, honey and salt and increase mixer speed (1,5). Mix at medium speed until dough is smooth and elastic, about 5 minutes. Then, add the softened butter in two times and when the dough is very elastic add the oil very slowly, a little at a time, stopping occasionally to prevent the mixture returns to be too soft and not more elastic. Cover and let rise (26°C) for about 2 hours.
Turn dough out on to floured surface and make fold. Folding dough simply means pulling one end towards the center and then pulling the other end's towards the center (See here - picture 3, 4, 5 and 6 ). Cover and let stand.
At this point, if desire, transfer the dough to a lightly oiled bowl. Cover the bowl with plastic wrap and refrigerate (4°C) overnight (12 hours) - remove the dough from the refrigerator about two hours before starting next steps.
Dividing and shaping: Divide the dough into 75-grams pieces. Shape the pieces into rolls. Let stand 15 minutes, then form the balls into oblong loaves and place on baking sheets. Cover and let rise (28°C) about 1 hour.
Brush with egg white and bake in a 350°F (180°C) oven for 15 minutes or until light brown. Remove from oven and while still hot, brush surface with sugar syrup (to prepare the syrup, boil 130g of sugar and 100g of water together).
Let the maraitozzi cool, and then cut them in half and place whipped cream inside.
